I don’t usually post food/recipes on here, but I do on occasion when they are warranted. I’m sure most of you can relate to being too busy to eat. Whether you’re a crafter that gets absorbed, or a mother (or father) with no time on their hands. I’m that person. There have been many days lately where I’ve gone until dinner time without eating, and without realizing. We are under going some dietary changes over here and so I’m having to scrap some of our old foods and replace them with new. I just started grabbing ingredients and threw something together quick. Since we don’t eat bread I pulled out a head of iceberg lettuce I had in the fridge. I’m calling this the Crafter’s Go-To Tuna Salad, because it’s quick, simple and has lot of nutrition, with just a little bit of bad (the dried cranberries, but trust me, they make it wonderful).

Crafter’s Go-To Tuna Salad
2 cans tuna packed in water
2-4 Tbs. Safflower Mayo
2 Tbs. dried cranberries, chopped
2 Tbs. pine nuts, chopped
1 Tbs. chopped cilantro
1 Head iceberg lettuce
Drain the tuna and put into a bowl. Add 2 tablespoons of the mayo and mix, add more as desired (I like a decent amount of mayo). Pile your cranberries, pine nuts and cilantro together and chop. Add to your tuna and mix. Gently peel off some lettuce leaves and rinse. Pat dry with a towel and pile on your tuna mixture. Enjoy!

You could do so many variations on this. My mom likes tuna with celery and capers. I could see adding a few dashes of hot sauce to this, too. Or even some chopped red grapes. Honestly, just use what you have in the fridge and cabinets and be sure to eat! I’m going to try and be much better about this.
Love tuna salad so this is great! It would use up some lettuce I have too:)
